Prior to coming to University of Minnesota, Cole was the program coordinator for the United Nations Association of Minnesota. He received his bachelor’s degree in Political Science from Hamline University in 2013, and is currently pursuing his coordinated master’s in public health, with a focus on nutrition and dietetics, from the University of Minnesota’s School of Public Health.

He is happy to be a part of Extension’s mission to support rural Minnesotans with his unique talents, having grown up on a farm just north of Cambridge, Minnesota. His hopes are to improve health equity across the state regardless of location, income or ethnic background through better food and more compassionate care.

Beyond the University, Cole is a proud Rondo-neighborhood resident of Saint Paul, and lives there with his wife, Savannah. In his free time, Cole is a long-distance runner, having competed in multiple marathons and other long-distance events across the community.
