Three new SNAP-Ed educators join Family Development


Three new SNAP-Ed educators have joined the Extension Center for Family Development (FD): Abu Farah, Shanda Walker and Elizabeth “Liz” McLaughlin.

Abu joined FD Feb. 12, when he began working as a SNAP-Ed educator based at the Extension Olmsted County office in Rochester. Abu has a bachelor’s degree in exercise science from St. Olaf College in Northfield.

Before joining Extension, Abu worked as a paraprofessional with at-risk youth in the Student Success
Program at John Marshall High School in Rochester. He also has worked with Somali youth at the Math and Science Academy, assisted with diabetes research at the Mayo Clinic, and volunteered with the Somali Resettlement Program — all in Rochester. Abu is a board member of the Masjid Abubakar Al Seddiq Mosque in Rochester.

Shanda also joined FD Feb. 12, when she began working as a SNAP-Ed educator based at the Extension Lyon County office in Marshall. Shanda has a bachelor’s degree in exercise science from
Gustavus Adolphus College in St. Peter. She also holds a master’s degree in exercise science and health promotion from California University of Pennsylvania in California, Pennsylvania.

Shanda formerly taught exercise physiology and nutrition at Southwest Minnesota State University in Marshall, and she was a personal trainer at Anytime Fitness.

Liz joined FD Feb. 20, when she began working as a SNAP-Ed educator based at the Extension Carlton County office in Carlton. She has more than 20 years’ experience in planning, organizing and coordinating various aspects of school nutrition programs.

Liz has planned and coordinated Farm to School and Second Chance Breakfast initiatives, as well as the summer food program, for the Proctor Public School District. She is president of the Minnesota School Nutrition Association Arrowhead chapter and serves on the School Nutrition Industry Partner conference planning committee.
