Cooking with Whole Grains Article Published

Family Development’s Early Childhood Nutrition Team is creating healthier food environments for young children in Minnesota and has the results to prove it! The team recently had an article published in the March issue of Journal of Nutrition Education and Behavior titled "Cooking with Whole Grains: A Skills-Based Training for Child Care Providers."

The article reported results of the training, as indicated by child care providers taking the training. They reported a significant improvement in knowledge as well as increasing confidence in their ability to:
  • Identify whole grain foods.
  • Prepare and serve more whole grain foods to children in their care.
  • Use various strategies to encourage children and parents to try new whole grain foods.
The Cooking with Whole Grains training has been adapted to an online training module hosted by Child Care Aware Minnesota. A training kit is also being developed by the Early Childhood Nutrition Team.

Authors of the journal article include Extension Health and Nutrition Educators Mary Schroeder, Anne Dybsetter, and Laura Perdue, as well as three members of the Applied Research and Evaluation team: Hyunjun Kim, Misty Blue, and Ali Hurtado.
